Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.




Roasted Butternut Squash Soup

Zoup Restaurant Recipe

Serves 4

1 stick butter
1 large butternut squash
2 cups chicken broth
1/2 cup cream
salt and pepper to taste

Preheat oven to 350 degrees. Slice squash in half lengthwise. Remove seeds. Puncture outer skin several times with the point of a knife. Place squash skin side up on a half sheet pan lined with foil. Pour 1/2 cup water in pan. Place squash in oven and roast until outer skin is very soft and browned well. This should take at least 1 hour and possibly 1 1/2 hours. Remove from oven and let cool.

In a large food processor with a blade, scoop out squash meat and process until very smooth. You can add 1/2 cup of chicken broth to help the processing. Do this in batches if the squash is very large.
Place puree in stock pot. Add the rest of the chicken broth and stir. Bring to a boil over medium high heat.Add cream and season to taste with salt and pepper.
