Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.




Creamed Chicken & Rice Soup

Zoup Restaurant Recipe

Serves 8

1 stick butter
1 cup onion, finely chopped
1 clove garlic, minced
1/2 cup carrots, peeled and diced fine
1/2 cup celery, diced fine
1/2 cup flour
8 cups chicken broth
1 squirt Worcestershire sauce
1 squirt Tabasco (optional)
1 1/2 cup wild rice cooked according to package directions
8 ounces cooked chicken, diced
2 cups heavy cream
salt and pepper

Melt butter in a large soup pot over medium heat. Add onions, carrots, celery, and garlic and saute until onions are translucent and soft, about 8 minutes. Stir in flour and continue to cook, while stirring, for 3 minutes. Add the chicken broth and bring to a boil stirring occasionally. Reduce the heat to a simmer. Stir in cream (do not bring to a high boil after this). Season with Worcestershire and Tabasco. Season to taste with salt and pepper. Stir in chicken and rice. Heat on simmer for 3 minutes and serve.
