Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.




Beer Cheese Soup

Zoup Restaurant Recipe

Serves 6

2 tablespoons olive oil
4 cups onions cut into strips
1 clove garlic, chopped
1 teaspoon thyme leaves
1 stick butter
4 tablespoons flour
12 ounces Gruyere cheese, shredded
1/2 cup beer
1 teaspoon worcestershire sauce
1/2 teaspoon hot sauce (Tabasco or whatever you prefer)
1 cup croutons
2 cups milk
4 cups chicken broth

Heat a large soup pan over medium high heat.  Add oil, onions, thyme, and garlic and cover for 10 minutes over medium heat.  Remove cover and cook for an additional 10 minutes. Add beer and continue to cook until the beer is evaporated.

Add butter and flour and cook for 3 minutes, stirring slowly. Add milk and bring to a boil while stirring. Add cheese and stir slowly into sauce. Add the chicken broth, worcestershire, hot sauce and season with salt and pepper to taste. Garnish with croutons.
