Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.




Loaded Potato Soup

Souplantation Copycat Recipe

4 lbs. potatoes
1/2 cup onion, chopped
2 cloves garlic
2 sticks celery
2 (14 oz.) cans chicken broth
2 teaspoons salt
1/2 teaspoon pepper
2 cups half and half

shredded cheddar cheese
cooked and crumbled bacon
sliced green onions

Layer cubed potatoes in a lightly greased 5 quart slow cooker. Top with onions, garlic and celery. Add the chicken broth, salt and pepper.  Broth will not completely cover the potatoes. Cover and cook on LOW setting for 8 hours or until the potatoes are tender.

Mash the mixture with a potato masher. Don't mash completely because you cant some of the potato chunks in the soup. Stir in half and half. Cover and cook on HIGH for 20 minutes or until the mixture is thoroughly heated. Ladle into bowls and garnish with your favorite toppings.
