Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.




Tomato and Onion Soup

Souplantation/Sweet Tomatoes Copycat Recipe

Serves 8

1/4 cup olive oil
2 1/2 cups onions thinly sliced
2 1/2 cups fresh Roma tomatoes, diced
4 cups tomato juice
2 cups water
1 1/2 teaspoon celery salt
1 1/2 tablespoons fresh basil, chopped
3 teaspoons fresh oregano, chopped

In large soup pan on medium heat simmer and stir onions until they turn transparent but not brown. When onions are transparent add tomato juice, water, celery salt, basil, and oregano. Heat and stir occasionally the mixture for 20 -25 minutes on medium heat. Add fresh tomatoes and simmer for 15 - 20 minutes longer.

Notes: The fresh herbs will make this soup taste great. Serve with grilled cheese focaccia dippers.  (See sidebar for recipe.)
