Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.

Roasted Potato Salad



ROASTED POTATO SALAD with CHIPOTLE VINAIGRETTE
Souplantation/Sweet Tomatoes Recipe

Makes 6 Cups

Chipotle Pepper Puree:
small can of Chipotle peppers in adobo sauce
Combine the peppers and adobo sauce in a food processor. Blend until smooth.

Potatoes:
3 lbs. diced red potatoes
2 tbsp. canola oil
Combine ingredients and mix to coat. Place onto a greased sheet pan. Bake at 425 degrees for 25 minutes or until lightly browned and crispy. Allow to cool.

Onions:
1 cup diced red onions
1 tsp. canola oil
Saute in a pan for five minutes. Allow to cool.


Dressing:
4 2/3 tablespoons  fresh lime juice
4 2/3 tablespoons canola oil
2 tablespoons red wine vinegar
2 tablespoons chipotle pepper puree
1 teaspoon garlic puree
2 teaspoon Dijon mustard
1 3/4 teaspoon kosher salt
1/3 teaspoon ground black pepper
Combine ingredients and thoroughly whisk.

Salad Assembly:
1/3 cup roasted red peppers (cut in strips)
1/3 cup coarsely chopped cilantro
cooked roasted red potatoes
cooked sauteed red onions
Chipotle Pepper Puree
Combine ingredients in a bowl and gently mix.
