Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.




Pear and Pecan Salad

Souplantation and Sweet Tomatoes Recipe

12 ounces romaine lettuce
1/4  cup pecan halves, toasted
16 ounces canned pears chunks, drained, juice reserved
1 tablespoon white wine vinegar
1/2  teaspoon Dijon mustard
1 teaspoon peanut oil or walnut oil
3 tablespoons pear juice
1/4  teaspoon  honey, or to taste
1 tablespoon blue cheese, finely crumbled, optional

Mix the salad ingredients in a large bowl.  Mix the dressing ingredients, adding pear juice and honey to sweeten and moisten.  Add crumbled cheese to the dressing then combine with the salad and toss. Let stand about 10 minutes before serving.
