Since the opening of its first Souplantation in 1978 in San Diego, California, Garden Fresh Restaurant Corporation has expanded to 61 salad buffet restaurants with locations in Southern California, where they are known as Souplantation, and in Northern California and ten other states, where they are known as Sweet Tomatoes. Differing in name only, the restaurants are known for their abundance of fresh, great tasting salad selections, soups, bakery items, pastas and desserts in a self-serve format, set in a casual dining atmosphere.

GOLDEN YAM BISQUE
Souplantation and Sweet Tomatoes Recipe

Makes 10 Cups

2 1/4 cups red onion, diced                                     
2 tablespoons butter                                                     
2 teaspoons minced garlic

In a pot, combine ingredients and saute for 5 minutes.

6 cups water                                                                      
12 cups ½” diced peeled yams (3 lbs)                     
1 1/4 cups frozen corn                                                       
3 1/2 tablespoons vegetable base                             
2 teaspoons dried thyme leaves
2 teaspoons Kosher salt
1/2 teaspoon black pepper
2 bay leaves

Add ingredients to pot. Bring to a boil and reduce heat to a simmer. Simmer until yams are tender. Remove bay leaves. With a handheld blender, blend soup to puree. Leave small pieces of yams.

3/4 cup heavy cream                                                         
2 tablespoons chopped Italian parsley                   

Add to pot and stir. Season to taste with salt and pepper.
